BREAKFAST
Needing a quick breakfast that was filling, tasty and healthy – I whipped up my super-duper peanut butter sandwich. I start with two slices of hearty multi grain bread, toasted. I smear about 1 tablespoon of creamy organic peanut butter on each side, just a light layer. I sprinkle one side with 1 tablespoon of ground flax seed and the other with 1 tablespoon of granola – in this case, pumpkin flax granola. Drizzle 1 teaspoon of honey on the flax seed side and smash the sides together for a tasty, filling sandwich which will get you through many hours of activity – like laundry, working out, running errands, raking leaves and paying bills. If you drink a couple glasses of water with it, you will be hydrated and full! Granola with dried fruit or spices like cinnamon makes it even tastier!
