So, it is dinner time already and you have to figure out what to do. Every time I opened the refrigerator since making my beautiful Bolognese sauce, I have seen a tupperware filled with baked Fusilli leftovers and I would think we need to eat that or I should throw it in the freezer. It is just too good to waste but no one in my family is that fond of leftovers; unless it is dessert.
Here’s what I did…
I opened a jar of Rao’s Arrabiatta sauce because as I have mentioned I love spices and spicy food and luckily, so does my family. I poured some on the bottom of a glass dish, put in the leftovers, poured the rest on the top, sprinkled with pre-shredded mozzarella – popped it in a 350° oven and waited until it looked bubbly, 25 minutes or so. Et voila, dinner… I got the boys to make the salad and turned to the other leftover bothering me on the counter, namely my leftover donut glaze.
I had been taking little bites out of the chocolate ganache bowl since breakfast and needed to do something with it.
Some time in my life, I remember making truffles from ganache or maybe I just read about it? I whipped out some Trader Joe’s Roasted Coconut and Roasted Pecans. I have a shelf in my refrigerator with all the random baking things I have bought in the last six months, thinking I will make something with it someday and I usually do, usually…
I used a teaspoon to scoop some chocolate, rolled it in a ball in my hand and rolled it through some of the coconut and pecans that I poured on a plate. No measuring… and dessert is born.
That is how I used some of my most recent leftovers and left my kitchen feeling all is well with the universe.
