It is Zack’s 9th Birthday and we have already had a huge homemade chocolate cake with vanilla and chocolate frosting for his kid party a few days ago. I could not get my act together enough to take pictures but it was a huge success, if I do say so myself!
Therefore, today, we are having friends over for Mexican food (his favorite – nachos and tacos) and brownie sundaes. I bought ice cream and am working on making the easiest brownies ever. I have developed this recipe over time and it is so easy that you have no excuse to ever by a brownie mix again – ever… have you read the ingredients in those?
Preheat oven to 350°. Grease the bottom of a 9×13 pyrex pan or whatever you like to use. Only grease the bottom so that the batter can adhere to the sides as it rises and won’t slip down or do so unevenly.
Throw all the ingredients in a stand mixer… yep, that easy.
1 ¼ cup unbleached flour
2 ¼ cup sugar
1/3 cup unsweetened cocoa
1/3 cup unsweetened dark cocoa (I use Hershey’s)
1 tsp. baking powder
1 tsp. salt
4 eggs
¾ cup melted butter
That’s it! Mix together. Put in the pan. Bake for 35 minutes.
You can add nuts, chocolate chips, frozen M&M’s or Reeses (so they don’t melt all over the place). My kids like them plain most of the time or sometimes I frost them and add sprinkles! These brownies are always a favorite and disappear the same day I make them.
