What?? You say… Cooking Frozen fish… This week I am working on making dinner from what I have in my pantry and refrigerator. I need to clean them out as part of my spring cleaning bug, even though it is snowing today and it is almost April!
Yes, I didn’t thaw them! It was time for dinner and I had a salad ready but needed a protein. I had three frozen Wild Caught Cod fillets and a box of Wild Caught Cod fish sticks for the kids. I looked around to find a way to cook my frozen Cod fillets without the horror of ruining them.
I found a website called Cook It Frozen, which I will put in a separate link. I thought why not? I needed dinner and fast.
I heated a cast iron skillet with olive oil and rinsed off my fish which had a bit of frozen ice glazed over it. I paper towel dried them and seasoned them with salt and pepper. I threw the fillets in the pan and got out stuff for the sauce…
1 Tbsp. of minced, fresh ginger root
1 hot yellow pepper
1 Tbsp. garlic chili hot sauce
2 Tbsp. soy sauce
2 Tbsp. hoisin sauce
1 Tbsp. rice vinegar
1 tsp. sugar in the raw
I sprinkled all of the ingredients over the fish, except the hoisin sauce, which I put in the middle of the pan.
After getting the seasonings in the pan, I put the pan into the oven at 425° for 6 minutes and started on a vegetable base for my fish.
I chopped up 1 cup of broccoli and 1 cup of snap peas. I put a pan of water to boil and threw in a handful of 10 minute farro. I threw in the vegetables with 2 minutes left to poach them a bit.
I drained the vegetables and farro, layered them in two dishes, placed the fish in the middle and drizzled the sauce over it. Voila… dinner was served.
To be honest, I overcooked the fish but the sauce made up for it. Therefore, I cannot tell if the fish was actually overcooked or if it tasted that way because I cooked it from frozen. Give it a try and let me know!
For me, today, the important thing was that I got a healthy, filling and tasty dinner on the table without going grocery shopping!
