I decided that I wanted to make Lemon Bars for a bake sale I had coming up for the Boy Scouts. I looked around and found this fantastic recipe that was called Lemon Brownies and didn’t involve a crust on the bottom. I will post the link to the website and original recipe later.
Preheat your oven to 350° and grease the bottom of your baking dish. In my case, an 8×8 pyrex glass dish.
Zest and juice two lemons and set aside. I recommend a micro-planer for zesting!
Beat in your Kitchenaid mixer if you have one or using a handheld mixer:
½ cup butter, softened
1 cup flour
1 cup sugar
½ tsp. salt
Mix in a bowl (or I like to use my 2 cup pyrex measuring cup):
3 eggs
lemon zest
3 Tbsp. of lemon juice
Pour liquid into solid… let mix on medium for 2 minutes. Pour into baking dish and cook for 25 minutes or until a toothpick comes out clean. When finished cooking, let cool completely – like hours! I know it is hard to wait!
Make your glaze:
1 cup powdered sugar
1 Tbsp. or more of the remaining lemon juice. Depending upon the size and quality of your lemons, you could have a lot of juice left or only a little. Use what you have and try your glaze. Make it to your liking.
Now, after I frosted it, I didn’t take a picture right away! When I came back into the kitchen, it was hacked into, which isn’t all bad since I took a few small bites myself to make sure it was okay!
This recipe tastes like a very moist lemony shortbread to me. I loved it topped with fresh strawberries and whipped cream. It was great alone too!
