It was a rainy Sunday and I was still working on cleaning out my refrigerator. It was time for lunch and I didn’t have that many options as I hadn’t defrosted anything and making frozen fish again didn’t appeal to me. Generally, I like to make soups on weekends but I wanted something quicker so I could go back to reading my book and being lazy!
I pulled out all the vegetables I had on hand, including pickles, cheese and some salami. I proceeded to cut everything to sandwich size and then, I let the kids make their own variations, using the ingredients they liked.
This was a great way to get rid of vegetables without cooking or making a salad. Luke declared his rollup a masterpiece. Greg finished his before I could even sit down with mine! All in all, you can make them vegetarian, vegan or for meat lovers.
The great thing about these rollups was that there is no recipe. It works for everyone and with a side of fruit, they are a downright filling, satisfying and healthy lunch. It took me 15 minutes to assemble the ingredients and make some rollups, then I was back on my butt reading away the afternoon, well, for a bit… until I felt restless and made the boys do laundry with me!
