Day 1.2 – Activate Menu

Summer for me means a certain amount of separation from my husband, Greg. I live in Rhode Island with the kids and he travels back and forth, as his work schedule allows. It has been three weeks since we have seen each other and we had a whole day together as the kids were in camp. Our first stop was our favorite breakfast place in Bristol, the Beehive Cafe. I highly recommend it if you are ever around visiting Rhode Island. It has a rooftop patio outside with a view of the sailboats in Bristol Harbor. Lovely!

Breakfast: Black Bean Fritter (gluten-free and vegan) with one scrambled egg, avocado and salsa with mixed fruit, coconut iced tea.

Lunch: Disclaimer – I was getting my hair done during the lunch hour and because I had such a filling breakfast, I opted for snacks. Fig granola bar, a peach and a handful of almonds. My granola bars turned out yummy if I do say so myself and I ate it as slowly as humanly possible.

Dinner: Greek chicken salad at the local pizza place with a glass of wine.

Ab workout – Um… I did it but my sit-ups and crunches need some serious work. I was delighted that the leg lifts and plank were a piece of cake. 2 out of 2 is not too bad!
