Day 4.2 – Accelerate Menu

Breakfast – 2 hard boiled eggs, coffee with soy creamer.

Lunch – Portobello stuffed mushrooms with squash, tomatoes and parmesan cheese, earl gray tea with honey.

It was a Sunday and we were making the long drive to Seekonk, MA to go to Target and Home Depot. Nothing like those stores exists anywhere near us in Rhode Island. We took the scenic route through Barrington, RI and discovered a fantastic place to stop for lunch or even better, a pastry. After the boys ate some great salads, they had a frosted brownie. I would have had the peanut butter brownie, it looked so awesome! I highly recommend a stop if you are ever in the area, the Blue Kangaroo Cafe!

Snack – 1 cup of Froyo frozen vanilla yogurt with strawberries and blueberries.

Dinner – Ratatouille with a cold beer! Heaven.

Dessert – Homemade fig granola bar while watching a foreign film called Delicious.

Ab workout – Oh yeah! It was a rest day!

Technically, the beer, quinoa/rice and granola bar do not belong on the Accelerate menu! I was living it up but I thought it was a good trade off from having such a light breakfast and lunch. I know this isn’t how it is supposed to work, but… I am only human!
