Breakfast: Omelette with broccoli and salsa, iced coffee with soy milk. Today was the last day that my favorite breakfast place, the Beehive, was open before they closed for renovations. Joe had pancakes and just watching him eat them made me happy.
Lunch: Grilled chicken Waldorf salad with raspberry vinaigrette, iced hibiscus, berry tea. After a long day of errands, we stopped for lunch at the Blue Kangaroo Cafe! I pulled out half the cheese and candied walnuts. It was fabulous.
Dinner: Mixed salad with homemade avocado dressing and 6 mango-jalapeño chicken meatballs from Aidell’s. For the dressing, I put a bunch of cilantro, pre-made guacamole, 2 Tbsp. olive oil, ½ lime juiced, 1 tsp. agave, salt and pepper in my blender and added water to thin.
Ab workout: It is getting harder! I am looking forward to a rest day! 35 sit-ups, 15 crunches, 15 leg lifts and 25 second plank.
