Day 9.2 – Accelerate Menu

After three days on vacation in Hershey, Pa, I am in serious need of a detox. I had some fabulous junk food but what is interesting, I could eat it and still feel hungry or not hungry but needing something else. Strange feeling, I missed my yogurt and fruit the most! I have decided to have three days of the Accelerate Phase to help cleanse out the chocolate and other treats that I have enjoyed for the last few days. I also went back up 3 lbs. over the weekend! UGH!

I have avoided the subject of upset tummies on this diet but I definitely get them, sometimes. Three times during the last month to be exact. I had a terribly upset tummy today and therefore, delayed restarting my ab workout. I will do it tomorrow as I think I am pass the worse of the tummy upset. I wanted to mention it as others may be experiencing something similar. I think it is my body’s way of saying, “I do not like junk food!.”

Breakfast: 0% plain Greek yogurt with oranges and blueberries, 1 tsp. raw honey, coffee with soy milk.

Lunch: Huge mixed salad with yogurt Ranch dressing, 7 mango-jalapeño chicken meatballs and sparkling lemon water. I ate every bite of my lunch and it took me forever. I sat reading a book and munched and munched and munched. I felt pleasantly full and able to finish doing my laundry and cleaning my house!

I made my boys BBQ ribs tonight. Around 11am, I was thinking about what I would make for dinner. Luke wanted BBQ chicken and I remembered that I had a bag of frozen ribs in the freezer. I put them in the crock pot (frozen!), poured in a beer and sprinkled it with a steak rub I had in my spice drawer. I put it on high for 6 hours.

After about three hours, my house was started to smell seriously good and I broke the ribs apart as they were still in one big mass in the middle of the pot. I settled them in the beer and walked away. When the boys came home from camp, starving, I pulled the ribs out, basted them with BBQ sauce and threw them on the grill. I added a frozen chicken burger for myself and dinner was ready in a flash! No heat in my kitchen!

Dinner: Chicken burger on summer salad! My summer salad consisted of several heirloom tomatoes, thinly sliced radish, ½ an avocado and pea shoots with salt and pepper and a dash of white balsamic vinegar. Luke loves my ribs but looked at my dinner and said, “Where’s my salad?” Ha, it was delicious and filling.

Dessert: Mint green tea to help settle my stomach, which is still not feeling great.

Ab workout: taking another day off as my tummy is upset!
