Day 15.2 – Activate Menu

Breakfast: Homemade Almond muffin (see previous post for recipe), coffee with soy creamer.

Lunch: Salad with hummus, vegetables and mango salsa, iced tea.

Snack: 1 cup of coffee toffee frozen yogurt at Spinnakers in Jamestown. We went by boat and I just couldn’t resist as it was such a perfect summer day and the boys were so excited to stop!

Dinner: Grilled shrimp and quinoa with sautéed vegetables – onion, red pepper, hot pepper, garlic, carrots and celery. For the grilled shrimp, I put a few different asian sauce on them, lightly for flavor. I also threw a Tbsp. of each sauce in the quinoa after it was ready. I think the shrimp would have benefited from some lime and fresh cilantro but I was tired from the boat ride and did the minimum needed to get dinner on the table!

Dessert: Glass of wine.

Ab workout: Yes!!! 15 sit-ups, 5 leg lifts, 5 crunches and 10 second plank!
