Dinner – 30 minutes or less – Stir Fry

You know you are doing something right when your family starts coming into the kitchen to see what you are cooking. This stir fry took no time and came together out of ingredients that were easy to find while wandering around Trader Joe’s – namely a bunch of asparagus, precut fresh Asian veggies and fully cooked brown rice. This is another dish that only used one pot – a wok – and I just threw ingredients in and made this up. You could use any pre-made sauce you like.

List of my ingredients in the order I used them:

1 Tbsp. Safflower oil

3 Chicken breasts

2 Tbsp. soy sauce

1 tsp. chili paste

1 container precut Asian vegetables

1 packet asparagus

2 Tbsp. Teriyaki sauce

2 Tbsp. more of soy sauce (that’s 4 Tbsp. total)

1/3 cup chicken stock

1 package pre-cooked brown rice

I had some chicken breasts so I gave them a quick chop and threw them in my hot wok that I had warmed up with Safflower oil. I added soy sauce, garlic chili paste and salt and pepper.

While the chicken was stir frying, I cut the asparagus – (tip: bend one stem of asparagus, where it breaks off is where you need to trim to get the edible part of the asparagus, throw away the rest – using the sample, trim all the other asparagus and give a quick chop.)

When the chicken is cooked, put it on a plate and throw in the veggies with Teriyaki sauce, soy sauce and chicken stock. Cook for a few minutes and throw in the brown rice, stir for a minute. Voila – dinner is served.
