Yesterday was not going to be a day we ate a meal together so I decided to make pasta. Pasta is always a go to meal when we can’t eat together because it reheats well. We do not have pasta that often and I think that is why my kids still say pasta is amazing and their favorite meal. I whipped this up in 20 minutes flat and each of us ate at different times but everyone agreed it was filling, tasty and “hit the spot!”
Ingredients (in order of usage):
1 Tbsp. olive oil
1 onion, chopped
2 baby bell peppers, chopped
3 cloves garlic, chopped
1 bag of Turkey meatballs (You could use any kind but get fully cooked. I actually don’t recommend the ones in the picture from Trader Joe’s. I had never had them before and we all agreed that they were not very good.)
1 jar pasta sauce (This Arrabiata sauce from Trader Joe’s is not too spicy and gives the pasta the right amount of kick!)
1 package of any kind of tortellini (This Kirkland brand was super yummy! I highly recommend it!)
1 bunch of broccoli
½ cup of shredded carrots
Let’s Cook!
Put a pan on the stove, add olive oil and start heating on low. Put a pot of water on to boil the pasta. Chop the onions, add to pan. Chop the peppers and garlic, add them to the pan. Throw in the meatballs (mine were frozen.) Cook for a minute or two, add ½ the sauce.
Cook your tortellini very al dente because it will soften when you add it to the sauce. I cooked my tortellini 2 minutes just to break them up and then added them to sauce.
Chop your broccoli and add it to the pan with the carrots. Add some more sauce, stir around. Voila!! Finished!!
We like our veggies crisp so if you want them softer, you will have to cook it a bit more. I would just turn off the stove and cover the pan for another few minutes to avoid overcooking the them.
