Baking: Banana Chia Chocolate Muffins

I made banana muffins and took them to my group workout class to celebrate one of our members birthdays. One of my new workout buddies wanted the recipe so here it is without photos, since we ate them all!!

Preheat oven to 400°. Grease bottom of muffin tin or line with muffin cups. Makes 12 muffins

Wet Ingredients:

2 eggs

3-4 ripe bananas, mashed

¼ cup safflower oil (or other vegetable oil)

1 tsp. vanilla

Dry Ingredients:

2 cups flour

1 cup oatmeal

½ cup Chia Bites, broken down into individual pieces (I get this at Costco and on Amazon)

½ cup sugar

1 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

Mix wet with each other, mix dry with each other… Then, gentle mix to combine. Using an ice cream scoop, scoop out batter and distribute it evenly. Bake for 10 minutes, then check for doneness… it may take up to 2-4 minutes more depending upon the heat of your oven! Enjoy!
