Dinner – 30 minutes or less – Chinese Beef Lettuce Wraps with Roasted Vegetables and Dumplings

I have always wanted to go to have Dim Sum but haven’t seemed to manage it. I imagine, at a truly, great Dim Sum, there would be fabulous Steamed Pork Buns. I have made Pork Buns, once! They are very time consuming so I switched to making the filling and using it in lettuce wraps instead; amazingly quick, easy, healthy and satisfying.

You can use any type of meat that you have on hand – ground beef, pork, chicken or turkey, shredded pork and chicken is also yummy. I always have these ingredients on hand so with the addition of frozen dumplings and roasted broccoli and Brussel sprouts, sprinkled with a spicy bottled sauce, I have dinner on the table in 30 minutes!

Preheat oven to 375°. Wash, chop your veggies – any fresh veggies will work – broccoli, onions, peppers, Brussel sprouts. Mix them up, sprinkle with whatever oil you have, Sesame or sunflower or olive… pop in the oven and let cook while you make the rest of the dinner.

Ingredients (in order of use):

1.3 lbs. Organic Beef (I use Costco brand, 85/15)

3 cloves garlic, chopped

1 inch ginger root, grated

1 cup green onion, chopped

2 Tbsp. rice vinegar

3 Tbsp. hoisin sauce

1 Tbsp. low-sodium soy sauce

1 ½ tsp. honey

¼ tsp. salt

¼ tsp. pepper

1 tsp. chili garlic sauce

¼-½ cup water

Serve with – 

Lettuce leaves (I use butter lettuce leaves but whatever you have will work!)

½ cup fresh cilantro leaves (optional)

Let’s Cook!

Brown your meat and drain away any fat/oil.

Add all other ingredients and cook for 5 minutes. 

Serve in lettuce leaves with cilantro. DONE!

While your meat is browning, start to cook the dumplings per the directions on the bag. Mine take only a few minutes and are organic, Costco too!

By the time your dumplings are finished, your veggies should be cooked and dinner is ready! My kids love this meal! 

You can make a quick dipping sauce by mixing up all the things that went in the meat – experiment and you will find a combination you like!
