15 Minutes: Lunch – Ham and Cheese Baguette

I may be in a hurry at breakfast but when it comes to lunch, I like to make something wonderful and sit down to enjoy it.  I had a friend coming for lunch and whipped up a semi-French baguette sandwich with fruit, veggies and hummus.  It was warm, delicious and took awhile to eat, which is a good thing when you have company you enjoy.

Serves two but easy to make more servings.

Ingredients:

½ a baguette

½ lb. ham

2 oz. cheese, thinly sliced or shredded (I used a fabulous cheese from Trader Joe’s call Melange Cheese – white Cheddar and Gruyere, which melted perfectly.)

1-2 Tbsp. butter

salt and pepper

Butter one side of the sliced baguette and salt/pepper it.  Place ham and cheese on other side of the baguette.

Put under the broiler in the oven until toasted, put together and cut into two slices.  As it is cooking, cut up some vegetables, whatever you have on hand.  Arrange with some fruit on a plate with some store bought hummus.  I make my own and so can you but I happen to have had some left over from my potluck that I needed to use.

Et Voila… a lovely and nutritious lunch for two.  Enjoy with someone you love!
