I am working on getting dinner on the table in no time at all. It would take us longer to drive over to Subway and order sandwiches, again, ugh! Nothing against Subway… it is Greg’s favorite. I have reached out to my friends for their favorite recipes but it looks like we all need help on this subject. Therefore, I am embarking on creating a new weekly recipe to take the pain out of dinner time.
My first entry is one that I came up with while reading Food and Wine. They had a beautiful shrimp and pesto pasta. I thought about what I had on hand and came up with this quick and easy recipe – my version of Chicken Pesto Pasta.
2 Tbsp. Olive oil
1 onion, chopped
1 pepper, chopped
1 lb precooked chicken, chopped
1 bunch broccoli, chopped
3 cups spinach
2-3 heaping Tbsp. Pesto
½ cup Parmesan
½ cup pasta water
2/3 box of cooked pasta, any kind
Salt and pepper
Heat oil and start throwing in ingredients in order as you cut it up. Serve hot, cold or room temp!
