Day 1.3 – Achieve Menu

Breakfast: Multi-grain toast with almond butter and a sprinkle of granola, coffee with soy creamer.

Lunch: Low-fat vegetable soup and ½ of a turkey, bacon and avocado sandwich (without the bread)  at Uno’s while shopping at the mall.

Snack: Small chocolate hazelnut yogurt with shredded coconut from Pink Berry, a treat to help get me through school clothes shopping at the mall with my three boys.

Dinner: Carrot pancake with pea shoot salad and yogurt and 4 mango-jalapeño chicken meatballs.

As I was at the mall shopping with the boys, I made them take a movie break and we saw “The Hundred-foot Journey,” which made me want to go home and cook something wonderful for dinner. A month ago, I marked the page in Bon Appetite magazine for these carrots pancakes (see my link to the recipe.)

I halved the recipe and added scallions and red pepper flakes. I still found them to be too sweet. Next time, I would add more scallions and some chiles, maybe more spices. They were easy to make and filling but too bland. I was glad I had the spicy meatballs to off set the sweetness of the carrots. All and all, still a nice dinner. I had fun making them while I listened to the Bollywood Workout channel on Pandora. The music is so upbeat, it made me dance around my kitchen and Zack came in to make me laugh with his Bollywood moves. 

Dessert: Glass of wine

Ab workout: Day of rest… ah!
