Breakfast: Oatmeal with blueberries, coffee with soy creamer.
Lunch: Peach Smoothie with red peppers and hummus.
Snack: Coffee with soy milk from Angelina’s. Since my favorite place has closed for renovations, I branched out and tried another coffee place in Bristol. Angelina’s has strong, cold brew for their iced coffee and single brewed hot coffee. Yummy but be patient, the hot coffee takes awhile as they like to explain the beans and the process.
Dinner: Lettuce wrapped fresh lobster roll with Sauvignon Blanc.
My parents were visiting and wanted lobsters. I am not a huge fan of lobsters but enjoy a lobster roll once in a while, especially around Rhode Island. I was reading the Food Network Magazine and saw their BLT Lobster rolls and made my own version with my 1 lb. lobster. I used 1 Tbsp. of light mayonnaise, 1 stalk of celery and the leaves from the heart, 5 basil leaves, juice of ½ lemon, salt and pepper. I served it on roman lettuce. It was deliciously decadent!
Dessert: 180 Trail Mix Crunch – Cashew! I shared a bag with my stepmom during a long, lovely conversation on our porch.
Ab workout: After 20 sit-ups, I feel like I am dying but the rest of the workout is not too bad! 40 sit-ups, 20 crunches, 20 leg lifts and 30 second plank.
