Breakfast: 1 egg, scrambled and fruit with yogurt, coffee with soy milk.
Snack: Handful of almonds.
Lunch: 6 chicken meatballs and a mixed green salad with chopped tomatoes, carrots, pea shoots and raw zucchini, Italian vinaigrette. This salad took me 5 minutes to make and 30 minutes to eat!
Dinner: Raw green beans and hummus. I do not recommend having such a small dinner. It will make you tired and grouchy but I was already tired and grouchy so I had nothing to lose. It also didn’t require cooking! I made the kids dinner and ran out of steam so I went with something fresh, quick and remarkably filling.
