Anyone who knows me, knows that I can never leave a recipe alone. The original recipe is fine but I love fig newtons and thought this would be a good opportunity to make a 17 Day Diet worthy variation!
One thing to note – these cookies or bars take a lot of expensive-ish ingredients. You may have them on hand or have to run out and get some. Remember to use your imagination and what you have on hand too, you might come up with something even better than the original!
Preheat oven to 350°.
Ingredients:
1/3 cup unsweetened applesauce
2 Tbsp. almond paste
1 Tbsp. coconut oil
¼ cup raw honey
¼ cup agave
1 egg
1 tsp. vanilla
¾ cup white whole wheat flour, unbleached
½ tsp. baking soda
1 tsp. salt
½ cup of vanilla whey protein powder
¼ cup of flax seed meal
2 cups of oatmeal, old-fashioned
1 cup of chopped dried figs
¼ cup of unsweetened coconut
½ cup sliced almonds
Throw everything in your mixing bowl and mix thoroughly. Press into a 9×13 pyrex glass dish and cook for 16 minutes. Let cool and cut into 18 pieces! Freeze some wrapped individually in plastic and then in a freezer bag because you can only have one, every other day and it counts as a protein and a starch!
These are wonderful as a snack or with coffee and fruit for breakfast! Enjoy!
